Onion Goggles or, How to Peel Onions Without Crying

Onions are delicious; they're anti-carcinogenic and also help prevent allergies, asthma and diabetes. You could even say onions are one of our best allies, if it weren't because each time you peel one you end up suffering and crying!

How is it that this seemingly inoffensive vegetable is capable of moving us to tears? Well, it seems onions contain an organic compound that liberates certain enzymes that are transformed into sulphenic acids once the onion is cut... we don't really understand how this works, but it can't be good news. Maybe if you peeled genetically modified onions this sort of thing wouldn't happen, but we all know real onions are better.
